Quinoa, Corn and Black Bean Salad
- 3/4 cup quinoa (rinsed)
- 1 can black beans (400ml)
- 2.5 cup corn kernels (2 ears of corn, cooked and shucked)
- 1 cucumber, lebanese (diced)
- 1 avocado (cubed)
- 1 mango (cubed)
- 1 cup coriander, fresh (leaves roughly chopped)
Cumin & Lime Vinaigrette
- 1 lime (juiced)
- 1/4 cup extra virgin olive oil
- 1/2 tsp cumin, ground
- 1/2 tsp sea salt
